Ingredients
Cupcake Batter:
- 1 and 1/2 cups all-purpose flour or gluten-free blend for GF version
- 1/2 cup unsweetened cocoa powder use Dutch-processed for a deeper chocolate flavor
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup granulated sugar
- 2 large eggs
- 3/4 cup buttermilk substitute with almond milk + 1 tsp lemon juice for dairy-free
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1/2 cup hot water enhances cocoa flavor
Frosting & Decorations:
- 1 cup unsalted butter softened
- 3 cups powdered sugar
- 2 tbsp heavy cream or coconut cream for dairy-free
- 1 tsp vanilla extract
- Red food coloring gel for Mickey’s iconic color palette
- Mini Oreo cookies for ears
- White candy melts or white chocolate chips for buttons
- Mickey Mouse cupcake liners optional, but highly recommended!
